Peking duck is one of the most famous dishes in China. Some fun facts about it is that the TV character Donal Duck was based off of peking duck. The peking duck has white feathers and an orange bill and feet. Before cooking the duck, air is blown into the skin to seperate it from the fat. The skin is coated with sugar before it's cooked to give it a crispy texture when ready to eat. The reason why peking duck is so big in China is because the rich flavor of the tender duck meat and crispy duck skin pairs well with the salty, seasoned notes of the hoison sauce.
